Chef Visit: Shaun Dickens of the Boathouse

Frieth school was visited by Chef Shaun Dickens from The Boathouse Restaurant in Henley on Thames as part of their whole school project entitled ‘Masterchef!’ The children of Frieth School have been writing to local chefs to research their topic and to ask them to help bring their learning alive.

Shaun did just that, by giving a fantastic talk on different types of vegetables, showing us not just purple beetroots, but golden beetroot and candy beetroot as well. The children were also fascinated to see the difference between traditional cauliflower and romanesco cauliflower and to hear about how vegetables grow in the different seasons.

To complete his brilliant talk, Shaun, with the assistance of two of the pupils, whipped up a fantastic dark chocolate mousse with white chocolate drops and has given the children the recipe to try at home.

“We were very excited about his visit and learning about how to make a chocolate mousse. It was very delicious!” said his assistants. 

It was a privilege to welcome Shaun to the school and the pupils and staff would like to thank him for his inspirational talk and demonstration which we are sure will lead to some budding future chefs

Hi Mrs Reid
 
Thank you for inviting me today, I really did enjoy the morning. I hope the kids did to.
 
The recipe is below for the chocolate mousse, I hope the kids have fun making it.
 
Chocolate mousse
 
225g Dark chocolate
150g egg white
150g whipping cream
1 tbsp. honey
White chocolate buttons
 
Melt the dark chocolate and add the honey
Whisk the egg whites to stiff peak
Whisk the cream
Fold the egg whites into the chocolate
Fold the cream into the chocolate
Set in a small bowl or ramekin and sprinkle the white chocolate buttons
